WHAT TO EXPECT
BOOK YOUR ESCAPEPlease note: This is an example itinerary. While the content will remain largely the same, the timings and order of events may be adjusted on the day due to weather or other factors.
10:00am – Meet at the RVIVAL teepee, located in front of the kitchen garden (just behind the car park and to the left of the hotel entrance).
We’ll start the day with a discussion on deer management, and the cultural heritage of wild food practices.
We will then move into a hands-on introduction to traditional deer butchery. Begin the respectful process of skinning and breaking down the animal, exploring how each part - from meat to sinew, antler, and bone - has traditionally been valued and used.
1:00pm – We will select a cut of venison for our fire-cooked feast. Using ancient techniques - cooking over open coals or in a ground oven with natural materials from the landscape - we’ll prepare a shared meal as a celebration of learning, effort, and the wild.
In the afternoon, we will complete the butchery process, concluding the day around 4:00pm.
We recommend bringing the following:
Waterproof jacket and trousers – Gore-Tex or similar; essential items
Well-worn waterproof walking boots
Warm wool layer – especially important in autumn and winter
Gloves, hat, buff – autumn and winter months
Water bottle

An exploration of Scotland’s traditional deer knowledge & wild food heritage.
Deer in a Day is a full-day, hands-on experience held at our teepee base. The day begins with an introduction to native deer and their vital role within the wider ecosystem, setting the context for everything that follows. From there, we’ll move straight into traditional butchery - starting with skinning and breaking down a whole carcass into its primal cuts. Along the way, you’ll discover how every part of the animal can be used with purpose and respect, from meat to sinew, skin, antlers, and bone.
A wild-cooked feast
Midday brings a pause to prepare and share a wild-cooked feast, using ancient fire techniques and cuts from the deer you’ve worked with. The afternoon allows time to continue with the butchery, package meat for use at home or in the kitchen, and reflect on the full experience. Rooted in tradition and guided by respect, this is a powerful, grounding encounter with food, nature, and heritage.
